Starter:
Steak tartare with tarragon emulsion, pickled red onions, crispy potatoes and browned butter.
Breaded prawns with mango chutney. Kimchi emulsion and miso marinated baby romaine.
White asparagus with mushroom hollandaise, toasted hazelnuts and tart cucumber.
Main:
Pan-fried tenderloin (80 degrees) with a red wine sauce, pan-fried duck liver and potato cake on Västerbotten cheese.
Salted cod with barbecued shrimp, lobster sauce, white asparagus and croquettes on lobster.
Goat cheese and mushroom terrine with Västerbotten brioche, portobello and pickled pears.
Dessert:
Crème Brule with a lemon sorbet
Chocolate tart with raspberry sorbet and mascarpone.
